Natalia Hernández led the project in which “the dog achieved over 92% accuracy in identifying whether or not food contains gluten, which is extremely useful given the amount of cross-contamination that exists in food. In the case of foods sold as gluten-free, a meta-analysis revealed that worldwide, 13% have some degree of gluten contamination, and this issue greatly affects people,” explained Hernández, the director of iz Solutions.

An event organized by Asoblockchain Costa Rica and the Costa Rica Fintech Association in March 2025, the more than 500 participants were able to enjoy the disgorging with an axe of a sparkling wine with Sommelier Natalia Hernández, director of iz Solutions, who also explained the basics of a tasting so that they could have an informed organoleptic experience to enjoy the wine with expert knowledge.
